Ingredients
Serves 1
- 140g tinned tuna in water or brine, drained
- 30g light mayonnaise
- 1 tsp dijon mustard
- ½ small red onion, peeled and finely diced
- ¼ tsp chilli powder or cayenne pepper
- 40g swiss cheese, such as gruyere, grated
- salt and pepper
- 15g panko or fine white breadcrumbs
- 1 small bunch parsley, chopped
- 60g green beans, trimmed
Method
Preheat the oven to 180ºC. Mix the tuna with the mayonnaise, mustard, onion, chilli powder and most of the cheese in a bowl then season to taste.
Spoon the tuna mix into a baking dish and sprinkle over the remaining cheese, breadcrumbs and parsley. Bake for 20-25 minutes or until hot all the way through. When the bake is nearly ready, steam or boil the green beans for a few minutes and serve on the side.
